Harvest Quinoa Salad (V*, GF) – tabouleh-style salad of organic red quinoa, sweet potato, Ramona Farms tepary beans and heritage red corn, apples, house-made citrus vinaigrette

Cider Braised Duck (GF) – sweet potato hash, smoked mushrooms, cider juniper sauce

Ute Mountain Corn Mush (GF) – Bow & Arrow yellow corn, bison meatball, “prairie sauce”

Whole Alamosa Striped Bass (GF) – sourced from Colorado Catch and served with seasonal vegetables

Venezuelan Arepa (V, GF) – turkey patty, bison patty or roasted vegetables with baby greens, red onion, tomato and avocado spread

Biskâ cha: Rabbit & Everything It Eats (GF) – braised rabbit, dandelion pesto, root vegetable

Bison Chili (GF) – ground bison and assorted vegetables simmered in vegetable stock and aromatics served over Red Lake Nation wild rice.

SWEET NOTE

Indigenous Rice Paddy (V*, GF) – Red Lake Nation wild rice, coconut lime broth, fruit, edible flowers

Sweet Arepas (V, GF) – a Venezuelan twist on an Argentinian favorite – goat’s milk dulce de leche with tender arepitas

Haupia (V*, GF) – Hawaii meets mainland – coconut roasted corn pudding with mixed berry hibiscus chutney.

Blue Cornmeal Cookies (V) – made with Ute Tribe blue cornmeal by Bow & Arrow Foods (V) *Gluten Free version available upon request*
